Hot Tamn's Jerky

Per 1# of beef (we prefer top round), you will need:
¼ cup soy sauce
¼ cup Worcestershire
¼ cup sherry
2 tsp Rocia Muy Calientes

  • We like to have the butcher slice the meat into a ‘bacon’ cut, then we slice it into strips 1” wide.
  • Mix the ingredients above, add the strips and allow to marinade for 24-48 hours in the refrigerator.  Using a plastic bag, with air removed, allows for the greatest absorption of brine.
  • Dehydrate the meat, using a dehydrator or a slow oven set on 145◦ - 155◦.  Dry to your choice of doneness.
  • Enjoy!

Easy Chicken

To any cooked chicken (i.e. breast, legs, thighs), sprinkle your choice of Hot Tamn's/Uncle Tom's seasoning. The flavor of the chicken is enhanced exponentially.

Salsa

Place in a blender any amount of roma tomatoes, or any 'meaty' tomato. Then add your choice of Hot Tamn's/Uncle Tom's seasoning until it fits your palette. You will be so surprised at how much flavor is in our 'sprinkles'! Serve with your favorite tortilla chips.

Turkey Loaf

If you want to make some seriously inspired ground turkey meatballs, mix Hot Tamn's sprinkles of choice with bread crumbs, (I used a tablespoon of 1.5 heat per pound of turkey), bind up the balls, brown, and then simmer in your favorite sauce. The sprinkles make a Tamn tasty meatball, brings the sauce to life, and really messes with people's taste buds. (Thank you, cousin Dana!!)
